Homemade Vanilla Essence

Why would you use commercially prepared vanilla essence. One of its main components is a product called Propylene Glycol which can be found in brake fluids and anti-freeze and that just sounds plain awful.. Genuine vanilla essence is dead easy to make and it keeps for ever and tastes just brilliant.

Ingredients

3 vanilla pods, split with a sharp knife but seeds left in
500 mls brandy

Add the pods to the brandy and store in a cool dark place for 3 months. You can sometimes get a cloudy solution which is just concentrated essence. Shake the bottle to distribute evenly. Because of the brandy this should last forever - except that it wont because you will use it in everything from whipped cream to the morning porridge in winter.
