The recipe for the bread comes from the Bakingsheet blog which is a favourite of mine.
Instead of using their recommended raspberries I use the frozen mixed berry mixes which is a little sharper. Toast a thick slab and top with the Orange-Lime Icecream and serve immediately.
Ingredients for the toast.
2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
3/4 cup sugar
1 large egg
1 1/2 tsp vanilla extract
3 tbsp vegetable oil
1 tbsp lime zest
3/4 cup milk (any kind)
1 1/2 cups mixed berries frozen and tossed in icing sugar.
Ingredients for the ice cream.
1 orange juiced and zested
1 lime juiced and zested + 1 lime juiced
400 grams icing sugar
600 mls single cream
Method for the bread.
Preheat oven to 180 degC.
In a medium bowl mix the flour baking powder and salt. In a large bowl, mix the sugar, egg, vanilla extract, oil, lime zest and milk. Whisk together until combined.
Add half the flour mix and stir until just combined. Add remainder of the flour and mix well. Gently fold in the berries. Pour into a greased loaf ti and bake for 1 hour or until a skewer inserted comes out clean.
Method for the ice cream.
Put the juices and zest from the orange and limes into a bowl. Add the sugar and cream and whisk with an electric beater until stiff peaks form. Freeze for 3-5 hours. Serve on toast.
Also goes well with Apple and pear crumble.
