Walnut, Mint and Feijoa Salsa

Alison Gofton came up with the perfect accompaniment to lamb. This is a sweet, sour and nutty condiment which teams up perfectly with the feijoas.

Ingredients
4 feijoas
½ cup chopped toasted walnuts
2 Tbsp chopped fresh mint
1 red chilli, deseeded and finely chopped
Grated rind and juice of 1 lemon or lime
2 Tbsp oil
2 Tbsp honey

Peel and finely dice the feijoas. In a bowl mix the feijoas, walnuts, mint, chilli, lemon rind and juice (or lime), oil and honey. Season with salt and pepper.

Use soon after making.
