Lemon and Orange Fruit Drink

This is a cordial made without alcohol. The fruit is boiled in a syrup and then the Tartaric acid acts as a perservative. This recipe makes 2 litres which should be diluted 1:4 with my favourite soda water or tonic water or even lemonade, however if choosing the lemonade, you may wish to reduce the sweetness of the syrup a little to allow for that.

Ingredients
grated rind of 2 lemons
grated rind of 1 orange
5 lemons, juiced
1 orange juiced
875 grams white sugar
1.5 litres boiling water
25 grams tartaric acid

mix all ingredients in a large saucepan and bring to the boil. Reduce heat and simmer for 10 minutes. Set aside to cool.

Once cool, pour through fine meshed strainer into clean dry bottles. Seal and store in a cool dark place for up to 3 months.
