I serve this with garlicky mashed potatoes with a few tablespoons of the pesto stirred through, a light salad and some of the pesto on rounds of sourdough bread topped with grated parmesan and a light drizzle of oil.
Ingredients
2 big handfuls of fresh basil leaves
1 big handful fresh mint leaves
1 handful of baking walnuts
4 tablepspoons freshly grated parmesan cheese
1 small handful of bread crumbs
1/3 cup of oil
Rack of lamb
Put the first 5 ingredients in a blender and start belnder. Drizzle the oil in until a thick paste forms.
Sear the rack of lamb until well browned in a heavy based frypan. Remove from the heat and smear a thick coating of the pesto over the lamb. Bake for 20 minutes at 170 degC for a medium rare.
Cut into chops and serve.
