Scones

It seems like an odd post given the common nature of scones but this is a really great recipe. When it comes to adding the milk I leave all the ingredients in the processor and mix until coarse crumbs, Roll it out to about 1cm thick, folded it then cut it. They dont tend to rise but go quite crispy. I started making these because my mother-in-law bough me a jar of crab apple jelly and a quick google search suggested these scones go great with jelly and cream. Which they absolutely do.

Ingredients
225 grams self-raising flour
1/2 tsp salt
30 grams sugar
55 grams butter, diced30 grams caster sugar
150 mls milk.

Method

Preheat oven to 200 degC.

Mix the first four ingredients in a food processor until crumbs.

Put into a bowl, add the milk and mix to combine into a firm dough. Pull the dough out and place onto a floured surface, Roll out into about 2cm thick and cut. Place on a baking tray and bake for about 12-15 minutes. Turn onto wire rack to cool.
