Roasted Peaches with Gingernut Filling


Most stone fruit tastes great when roasted. This is a favourite of ours.

Ingredients

1 Peach per person, halved and stoned
2 ginger nut biscuits per person (I use Weight Watchers Ginger Crunch)
2 baking walnuts per person
5 grams softened butter per person + butter to dot
1 + 1 tablespoon Amaretto or peach schnapps
Maple syrup or honey to drizzle

Method

Preheat oven to 180 degC.

In a mini food processor, blitz the biscuits, nuts, butter and liquor until a fine crumbly texture occurs.

Sprinkle about a teaspoon on each peach and a few drops of the extra Amaretto. Drizzle lightly with the maple syrup or honey and roast for about 20 minutes until the fruit has softened.

Best served with plain pouring cream and some rice pudding wither hot or cold.
