This recipe comes from my mother-in-law and now sets the standard for eating sweet potatoes or kumera in our house.
Ingredients
1 medium orange, rind grated and juiced
1 tablespoon brown sugar or palm sugar
1 large sweet potatoe.
Method.
Combine the juice and the rind of the orange in a bowl large enough to hold all the ingredients. Peel and cube the sweet potatoe and add to the orange mixture.
Allow the mix to marinate for at least an hour or no more than 4 hours. Roast until cooked.
