Very much a rough "peasant" style pesto. I served this with roasted pork fillet on apple sage crisps with sweet potato mash/
Ingredients
12 baking walnut halves roasted @ 180 degC for about 5 minutes
small bunch sage, leaves picked and stems removed
2 tablespoons grated parmesan
3/4 peeled and cubed granny smith apple, roughly chopped
1 teaspoon honey
1 teaspoon lemon vinegar
1 teaspoon bran oil
salt and pepper to season
Combine all ingredients in a stick blender and process until nuts are roughly chopped. Take care with the apple to ensure that the mixture is sill quite dry and not too much juice from the apple is released to make the mixture slushy.
Cover an refrigerate until needed.
