Corn Fritters

I love corn fritters. This recipe yields about 15 good sized fritters that go great with a salsa, fresh salad and some bacon.

Ingredients
3 corn cobs
1 cup creamed corn
3 eggs
1 1/4 cups plain flour
2 teaspoons baking powder
1/2 cup milk, or enough to make a batter
1/4 teaspoon salt
1/4 teaspoon ground pepper
2 teaspoons finely chopped green onions
2 teaspoons finely chopped chives
2 teaspoons finely chopped parsely


Method

In a microwave, cook the corn cobs on high for about 9 minutes, before allowing to cool then peel. Using the sharp edge of a knife, cut the top half of the kernals off the cob. Then using a spoon scoop the left behind pulp off the co. Add the creamed corn and set aside.

In a large bowl, beat the eggs until combined and add most of the milk. Add the flour and the baking powder and mix well. Add the remaining milk if required to make the batter about medium thickness.

Add the salt, pepper and the herbs, mix well before adding the corn mixture.

In a frying pan with some oil, drop large tablespoons of the mix and be careful about crowding the pan. Cook on each side for a few minutes until brown. Keep warm until they are all cooked.
