I came across an article this morning which tried to give a rating on some of the different chefs knives out there. I was quite impressed by the lengths to which the reviewer went to make the test as fair and as repeatable as possible. http://www.cookingforengineers.com/article.php?id=129 is the link to the article which came to some interesting conclusions.
I was not so surprised to see the Global Chefs knives perform so well. I fell in love with my first global knife about 6 years ago and when my step-daughters set up a flat i foolishly let them have it. A year later I got it back but it has taken me a long time to get the edge back to where it should be. To do this I bought the Global Pull-Through water wheel ceramic sharpener and it seem to have required a little wearing in itself. However, now my vegetable knife is my best friend in winter for cutting up all the vegeies for soups and stews.
I have also purchased the large chefs knife and the small paring knive. My next purchase will be of the smaller chefs knife. Oe of the reasons that I like these knives is the way that they hold. I have smallish hands and with some of the bigger heavy knives I find them hard to grip securely and comfortably. The global knives however seem to fit me perfectly.
