Cold Noodles in Sesame Sauce

This is a refreshing dish in summer and keeps well in the fridge making it perfect for lunches.

Ingredients

1 packet noodles
1 spring onion, green and white very finely sliced
1/2 tablespoon soy sauce
1/2 teaspoon hot sauce
1/2 teaspoon sesame oil
1 teaspoon sesame oil
1 teaspoon rice vinegar
pinch of sugar
1 tablespoon toasted sesame seeds

Method.

Cook the noodles in boiling water until cooked.

Rinse immediately under cold water to stop the cooking process.

Mix the remaining ingredients together and toss with the noodles. Chill over night, stirring the noodles in the morning to make sure they are separated.
